Is Windows' "Antimalware Service Executable" slowing down my system backup to NAS?

I am trying out a new program called "Ashampoo Backup Pro 16" to do a complete (and later incremental) backup of the most important drives in my desktop PC (Win10 21H2, Ryzen 7 3700X, 24GB RAM) to my Synology NAS connected via Gigabit Ethernet.

What I noticed was a very "spiky" usage of the HDD/SSD currently being backed up in conjunction with a "spiky" Ethernet Send usage - as you can see in the screenshot of Task Manager:

When cheking the active processes, I noticed that always when my network usage caused by the backup program drops, the "Antimalware Service Executable" process is peaking up to ~300MBit/s for a few seconds before the cycle starts again. All other system resources are not limiting (CPU <10% usage, RAM <40%, ...).

Is Windows Defender interfering with my backup process (in the sense that it slows the backup process down)?

If so, can I deactivate this behavior?
